The Chefs: Adam Pegg & Lucais Syme, executive chefs and co-owners of La Quercia, a Vancouver trattoria on 4th Avenue.

Vancouver chef Adam Pegg is a veteran of the West Coast restaurant scene, most recently at La Buca in Kitsilano. Slow Food-trained in Marche, Italy, he has worked in Trentino, Abruzzo, Piedmont, Victoria and Vancouver. Edmonton-born chef Lucais Syme has worked at a number of Vancouver's best restaurants, including La Buca, The Parkside, and Adesso Bistro.

Their new trattoria, La Quercia, opens July 1st at 3689 W.4th Ave in Kitsilano. The cuisine is predominately Northern Italian but samples ideas and techniques from throughout Italy. The 2-, 3- and 4-course lunch and dinner menus change daily. Ingredients are sourced locally, pastas are handmade in-house and the risottos are made to order from the finest Italian rice available. The wine list is Italian and British Columbian, with weekly specials.

The Menu: Gamberi, vitello tonnato, tortellini in brodo, risotto, maltagliati con vongole, cozze e cime di rapa, coniglio con le fave e pancetta, agnello con tagliatelle di verdura 

The Cause: 100% of all net proceeds from every Hard Supper Club will go to the Scotty Hard Trust, a legal trust fund set up In New York to benefit Scott Harding, aka Scotty Hard (www.scottyhardtrust.com)

On February 16th, Scott was in a serious car accident and is now paralyzed from the chest down. He was moved from Bellevue Hospital in early May to a sub-acute rehab centre in the Bronx, where he continues his recovery.
